Simple Glossy Carrot


2 table spoon Ghee (Clarified butter)
1/2 tea spoon minced green chillies
1/2 tea spoon minced gingr root
1 tea spoon cumin seeds
2 table spoon honey
1/2 tea spoon turmaric
4 cups carrot
1 tea spoon lemon juice
2/3 cup water
1 tea spoon salt
1/8 tea spoon black pepper powder
2 table minced coriander or persley


1. Slice peeled carrots into 1/8" diag.
2. Heat ghee till haze appears
3. Fry cumin seeds till golden , add ginger, chilli and fry till golden.
4. Add honey , turmaric and carrots
5. Stir fry 3-4 min and add water . Reduce flame and boil for 20 min.
6. Add salt and black pepper and cook till dry and tender.
7. Stir in herbs and lemon juice.

Scrambled curd

scrambled curd
(Serves 4-6)

1 gallon of fresh whole milk
1/2 to 3/4 cups Lemon juice
3 Tabke spoon Ghee
2 Tea spoon Cumin Seed
1 Tea spoon Salt
1/4 tea spoon ground course black pepper
1/2 rea spoon termaric
1/2 cup heavy cream
2 tea spoon minced coriander or parsley

1. Bring milk to boil and Stir
2. Add curdling agent(Lemon juice or vinegar) and turn o heat
3. Strain curd through collander
4. Add Ghee slightly in Wok
5. Add cumin seed and fry till it brn.
6. Add curd(Chana), turmaric and Salt.
7. Turn o heat and add cream and pepper.
8. Stir gently and add coriander
